Burgundy's most steely whites are made in Chablis. They epitomise the classic description 'all minerals and wet stones', referring to that unique aroma that accompanies the first drops of rain on a humid summer day.
At the top of the tree sit some of the most complex dry whites in the world, with a dazzling array of flavours in the best examples of Grand Cru Chablis. It is only the greater availability of these wines that makes them so much cheaper than their equivolent from the Côte d'Or as they are certainly comparable in quality. Chablis nowadays is seen as a fresh and zingy dry whiote, with steely textures, medium body and clean finish. Sadly, as in the rest of Burgundy, careful selection is recommended as it is the grower rather than the name of the wine which determines quality.
