The world's second favourite white grape variety? Probably, but its worth mentioning the array of styles it is used for, from the flinty mineral-styled Sancerre, through the zippy fruit explosion of New Zealand Sauvignon to the incredible sweetness of Sauternes. Generally speaking its full of passion fruit and gooseberry fruit, but can be made into a dry less fruit orientated wine, and is used in Sauternes for its acidic character which balances out the sweetness of the wine.
