Tasting Note

This is a rather more unusual and interesting medium dry Amontillado Sherry. The must or grape juice originates from our vineyard in the renowned Macharnudo area of Jerez, and is aged under a veil of flour for more than eight years. Further maturing, allowing oxidation of the wine takes place for at least another eight years. Then a touch of our Pedro Ximénez Sherry is added to make this amontillado less dry and very slightly sweet. The result is a complex wine, sweeter in aroma than usual for an amontillado.
Caramel and toffee with roasted hazelnuts and a touch of raisin sweetness. Rich, full and textured. The addition of the 5% Pedro Ximenez gives just a touch of softening sweetness to this grand old Amontillado.
