The surrounding vineyards are planted with indigenous Sangiovese grapes (Prugnolo), used to produce one of Italy`s noblest red wines. Susanna Crociani blends Sangiovese with a little Canaiolo and Mammolo, and traditional winemaking methods encourage extraction of voluptuous fruit character, with a distinct mineral and subtle oak influence after two and a half years in barrel and a further six months in bottle. The wine is ruby red with an orange tint, leading to a delicate and intense wine.

Convento San Francisco Selección Especial 2018 is made up of 2 small, very old Tempranillo vineyards under the D.O. Ribera del Duero, located in the municipalities of Gumiel de Izán and Quintana del Pidio, 65 years on average. They are located at 850 meters above sea level on slopes and moors. The soils are composed of sand with gravel and red clay.
The plots were harvested on October 5, 2018, manually, in 15 kg boxes. These were received through a double selection table, of bunches and grapes.
It fermented and macerated in a small tank at controlled temperature for 26 days with daily manual pumping over and beating.
Aged for 21 months in 225 L French oak Bordeaux barrels.

A dessert wine made from choice white grapes of the Malvasia del Chianti and Pulcinculo (Grechetto Bianco) varieties, selected at harvest-time and are laid out to dry until the beginning of February. The storing and ageing of the wine then takes place in small oak barrels which impart flavours of sweet spice and vanilla to the finished wine. It is amber in colour, the aroma is intense with notes of ripe fruit and it is broad, velvety and mouth-filling on the palate.
